The restaurant is in many ways a time capsule of Spanish cooking. With recipes almost 300 years old, and the use of original ovens, there is a level preservation of culture and taste that even a well composed cook book could not match. There is little need the restaurant to make a presence through publications, as it holds a high reputation in customer satisfaction and is well advertised via word of mouth. Having ate there myself, I certainly say I would not be apposed to getting my hands on the original recipes for some of their meals.

http://www.travelocafe.com/2011/01/madrid-oldest-restaurant-in-world.html

Every restaurant has a story to tell.
